Some bone shanks make bulalo because it features bone broth, and nilaga contains a stock from boiling meat and bone. The shanks in bulalo also have meat around the bones so I don't personally see a difference. It's one of my favorite comfort dishes along with arroz caldo and chicken adobo.
The bulalo is named after the main ingredients, the beef shank, while the more generic nilaga is made with meaty beef cubes. However, it's the kind of soup that is made that matters to your taste buds. Bulalo is a beef stock and nilaga is a beef broth.
Once the dish is ready to be served, arrange your Nilagang Baka on a large serving bowl. I love this dish with patis (fish sauce) and calamansi dipping sauce. BEST WITH: Freshly Steamed Rice, Pritong Isda (Fried Fish) or just eat this dish alone, with all the medley of vegetables…it's a meal on its own.
Season with salt, pepper and patis. Lower heat and add in vegetables and cook uncovered. Serve hot with rice, soy sauce/patis and calamansi to taste.
The word nilaga translates to boiled in English, which perfectly describes the cooking method for this dish.
