Italian almond paste is called marzipan in general culinary usage, but specifically in Italy, it's often referred to as pasta di mandorle. This sweet paste is made from ground almonds mixed with sugar or honey and sometimes augmented with almond oil or extract.
Authentic Italian hangover cake is an orange flavored cake infused with amaretto, rum and vodka. In my version the orange flavor comes from swapping out triple sec for the vodka. Then I up the almond flavor to make it characteristic of traditional Italian cakes that I grew up with.
Amaretti biscuits are an absolute Italian classic. In fact, they are as traditional as cantucci (biscotti), panettone or tiramisu.
