FAQ

Softened cherries processed smooth in food processor. Cherry puree simmered a few minutes longer to thicken. Fruit purees are an excellent component for creating sweet and savory dishes. As a simple embellishment or as the star, they pack tremendous flavor and can dramatically change your cooking and baking.

Add cornstarch to fruit sauces that need thickening. Always mix cornstarch with a cool liquid before adding to ensure that it doesn't clump up in the boiling fruit mixture.
If not using the cherry puree immediately, you can store it in the fridge for up to 5 days. I like to use small mason jars to store it in serving sizes that will get used up at one meal. Alternatively, pour the puree into a silicone ice cube tray and freeze.
