Captain D's uses whole fillets of Alaskan Pollock for their base battered fish.
To batter fish, all you've got to do is dust it with flour, dunk it into the batter and then fry. The batter adheres to the flour, no eggs necessary. It pretty much depends on the ingredients that you use for the batter. But, cornstarch and egg would definitely help these two have a sticky consistency.
Carbonated water: The air pockets from carbonated drinks is extremely important to created a really light and crispy batter. You can use club soda, sparkling water, seltzer or beer but I would stay away from anything with too many sugars. Consistency: You definitely don't want your batter to be too thick.
Flour– Both for the batter and to toss the fish before battering, which helps to hold the better on while frying. Seasonings- Garlic powder, paprika, salt and pepper.
