Cane syrups are usually made from sugarcane juice, concentrated by evaporation, after clarification, before any sugar is crystallized out or otherwise removed.
Cane syrup is used in a lot of bars but often not in its most authentic form. Typically, bartenders will source organic cane sugar in its crystallized form, and the results taste similar to a simple syrup. But anyone who has made cane syrup from actual cane juice will tell you it will transform your cocktails.
Since cane sugar is made of sucrose, it's essentially a mix between corn syrup and high fructose corn syrup, since it's a mixture of glucose and sucrose. It is less sweet than fructose, so more cane sugar is required in recipes to gain the same amount of sweetness.
We think of maple syrup and that sticky texture and candied density. But cane syrup is naturally thinner and only mildly sweet. It doesn't share with either maple syrup or Dixie crystals that tooth-aching bolt of super-refined sugar.
Cane syrup is of no more benefit to your health than table sugar. Although sugar makes food taste better and does no harm in moderation, the American Dietetic Association recommends that you monitor your sugar intake and consume less when possible.
