If using a slow cooker, let the roast cook on low for 8 hours. If using an Instant Pot, use the high pressure setting for 2 hours. When the meat has finished cooking, it should be so tender that it's easy to shred using two forks. Shred the meat and mix with the sauce.
As bison is leaner than beef, it cooks faster. For medium-rare doneness, aim for an internal temperature of around 130°F to 135°F (54°C to 57°C). For medium, a temperature of 140°F to 145°F (60°C to 63°C) is suitable.
