Making a pie was a great idea, even if it was for breakfast. I'm sure my husband would have liked his favorite berry pie, but I wanted to make one that was a little more breakfast-y. This recipe, Mexican Onion & Chile Pie, is a perfect breakfast pie and the flavors are not too strong for the morning taste buds.
Crust
- 2 cups Gold Medal™ all-purpose flour.
- 1 teaspoon salt.
- 2/3 cup plus 2 tablespoons shortening.
- 4 to 6 tablespoons cold water.
If it has Top but no bottom crust, it's a Pot Pie. So a Meat Pie is a dish of Meat encased in Pastry. Generally a warm stew. But there are cold variations, picnic pies, that have cold meats, sometimes eggs, and often set flavourful gelatin poured in.
Wet pie fillings + raw dough are a tricky combination. If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.
