Use the machine to mix and knead your dough only. Using a bread machine can save you time and effort (although, honestly my method takes very little time and hardly any effort). But by shaping it yourself you can shape your loaf as a tin, a plait, a bloomer etc.
A: Raw dough setting is where the machine just mixes the ingredients for you. Leaven Dough is supposed to be that plus warming the dough so it rises and is ready to be taken out and done with what you want to do with it but in my experience, it isn't a very good setting for that purpose.
Can I use all purpose flour in a bread machine? Yes, you can easily use all purpose flour in a bread machine.
Add ingredients in order to the bread machine pan. Choose the dough setting on your machine and press start. Allow the machine to knead, mix and rise your dough. When the entire cycle is finished remove the dough and form into loaf (loaves) or place in desired pan.
Some attribute the demise of the bread machine to the fact that cooks were just disappointed by their results.
