The truth is, gluten-free pasta is nearly identical to regular pasta noodles! In fact, in blind taste tests most people we've cooked for tend to prefer the gluten-free noodles.
Traditional lasagna noodles are not gluten-free. The good news is that there are several brands of oven-ready gluten-free lasagna noodles! I have only tested this recipe with Barilla gluten-free oven-ready lasagna noodles. The Barilla gluten-free lasagna noodles do not need to be pre-cooked.
Once the dish has cooled completely, transfer it to an airtight, freezer-safe container, seal and freeze for up to 3 months. To serve, defrost thoroughly in the fridge overnight before reheating. Loosely cover with foil and bake until dish is thoroughly heated through. Reheat until piping hot.
Bring 3 quarts of water to boil in a large skillet or pot that is as wide as the noodles. Salt the water to taste. Cook 4 noodles at a time for 4 minutes, using a fork to gently keep them from sticking together.
