Soup bones are beef marrow bones that are cut into 2-3 inch pieces and make for a delicious and nutritious soup. They come from the arms and legs of cows and are commonly referred to as 'pipes' by butchers because they look like... (wait for it) a small pipe.
The marrow is a superfood in itself!. My big girls eat it right off the spoon but you can also spread it on crackers, stir it into a soup or stew, or smash it into some baby food (I mix a little into chicken or beef purees with the bone broth for baby.
You want to cook your broth on a simmer over a long period of time. You're best to use a variety of bones, and the best beef bones include marrow, knuckles (cut in half), joints and feet. The bones must be blanched and roasted before boiling.
Bring to a boil, then reduce to a simmer and cover. Cook for at least 10-12 hours, or until reduced by 1/3 or 1/2, leaving you with 6-8 cups of bone broth. The more it reduces, the more intense the flavor becomes and the more collagen is extracted. We find 12 hours to be the perfect cook time.
