Grill the burgers, covered, over medium heat until a thermometer reads 160°, five to six minutes on each side, basting the patties with 1/2 cup barbecue sauce during the final five minutes. Serve the patties on buns with your toppings of choice and the reserved barbecue sauce.
Rub a little olive oil over both sides of the burgers and generously season with salt and cracked black pepper, much like you would cook a steak. Ensure the bbq is piping hot before you start cooking – the burgers should sizzle on contact. This helps sear the meat on the outside and build up a flavoursome crust.
