Birria is a traditional soup that originated in Jalisco, Mexico. It is a rich stew that's typically made with either goat or lamb. But now, beef (rez) is the most commonly used meat. It's traditionally served in a consomé broth, along with a mixture of white onion, cilantro and fresh lime juice.
The Spanish were said to not enjoy eating goat meat because of its strong, gamey flavor and tough texture. To solve this problem, the Spanish started cooking the goat meat with many spices at low temperature for a long time - and invented birria. As birria traveled north through Mexico, it was transformed.
Cooked slowly in a rich and spicy consommé—a deeply flavorful red broth made with dried Mexican chiles, herbs, spices, and aromatics—the meat becomes tender and is served shredded in the consommé. It's a stew that is built on layers upon layers of flavor with smart techniques and little effort.

Birria is a good source of high quality protein, and provides good amounts of iron and potassium. You can get even higher iron and lower fat birria if you choose birria made with goat meat. Like many Mexican soups and stews, it's common to serve plenty of vegetable garnishes with birria.
